CREAM OF LEEK, ONION AND POTATO SOUP
Ingredients:
2 tablespoons of olive oil
2 leeks, chopped
2 celery stalks, chopped
1 medium onion, chopped
4 potatoes, peeled an chopped
1 cup of heavy cream
1/2 teaspoon of salt
1/4 teaspoon of white pepper
1 tablespoon of parsley, chopped
1 green onion, chopped
1 cup of croutons
1. Heat oil in a large pot.
2. Add leeks, celery, and onion to the pot and cook for 5 minutes.
3. Add stock to the pot and bring to a boil.
4. Add the potatoes, reduce to a simmer and cook until the potatoes are tender. About 20 minutes.
5. Transfer the soup to a blender and process until smooth.
6. Return soup to the pot and add heavy cream and salt and pepper.
7. Cook until the soup thickens.
8. Serve topped with parsely, green onion and croutons. Can also be served chilled without the croutons.
